Our Beginners course is literally for the beginner stage of cake decorating.

how to use sugarpaste or roll out icing to cover a cake

create sugarpaste cake toppers (novelty animals, flowers etc.)

and how to use royal icing for piping a greeting on a cake.

For anyone interested in making or eating cupcakes, which I am sure is a lot of you,  I want to let you know about a product that I would highly recommend. Its called the Cupcake Courier.

The Cupcake Courier is a product designed to safely transport cupcakes in a lovely carrier.  It was invented, developed and designed by a mother of two looking for a product to transport cupcakes she takes to her children’s parties and family functions.

The Cupcake Courier is a rectangular, translucent plastic container that holds three stackable cupcake trays.  Each tray is like the tin you would back the cupcakes in the oven. The cover has a comfortable handle and the bottom 4 latches hold the base securely.

The Cupcake Courier is able to transport and/or store up to thirty-six cupcakes all in one easy great looking container.

The 3 trays can be removed and the unit can double as a cake carrier also.

I have three of these Cupcake Couriers for the past few years and would highly recommend them. I make great use out of them when I am setting up cupcakes at a wedding venue or just need to transport a lot of cupcakes safely. I can carry 108 with no worries.  They have never let me down.  I was looking for another one recently and came across this company in the UK who sell them.  So now I’m letting you know.

• the competition winner will receive a wedding cake up to the value of €500 (no cash equivalent will be offered)
• free delivery within an 80km radius of Cannaboe Confectionery, Ballinamore, Co. Leitrim (couple is responsibility for full delivery costs if outside of the 80km radius)
• competition is open to couples getting married in 2013/2014 only (up until 31 December 2014)

We made a cake to celebrate the launch of Getting Irish Business Online in the Landmark Hotel in Carrick-on-Shannon on Monday last. Thanks to Ivan Keaney Photography for the photos. This is a great opportunity for a business to get online. 

Our own website has been up since 1998 and I would encourage any business to take the leap online.  You cannot answer the phone 24 hours a day but even if the website only had your basic details it is there 24/7 to be viewed by prospective clients from all over the world. If you are thinking about it have a look at the Getting Irish Business Online site and get online with the help of Google, Blacknight Solutions, An Post and your local City or County Enterprise Board.

We made mini cakes during our sugarcraft course in Athlone IT on Monday night 21st March. There were all shapes and sizes using madeira cake.  They are so colourful. The ladies really made a great job of them.  Next week we are making sugarpaste people.  Looking forward to that.

The fair is run by Belton Wedding Fairs with Pauline Belton from Grafters Hair Co., at the helm.  Looking forward to talking to and seeing the future brides and grooms at our stand.  Our most recently created cakes will be on display along with a tower of our valentine cupcakes. We will have offers on the day for any deposits taken and also a special wedding cake at a discounted cost. We were delighted to be chosen and commissioned with the design and production of a suitable cake to help celebrate 50 years of the American Chamber of Commerce Ireland.

The cake was a very bright, vibrant 3 tier with the American colours in the main design and both the American and Irish flag handmade from sugarpaste drapped around the cake.

The event was held in The Gresham Hotel where the very first meeting took place in 1961.  The American Chamber’s new President, Gerard Kilcommins, had his first press conference and was photographed alongside the cake with CEO of The American Chamber of Commerce Ireland.

Our cake was in Irish Independent, Irish Daily Star, Irish Daily Mail with online photos in Breaking news.ie and The Irish Examiner.com.

We really enjoyed making this cake and were delighted our clients were very happy with the results.
