Tracy & John’s Wedding Cake

One of our Larger Wedding Cakes

Cannaboe Confectionery created this tower of cakes for a recent wedding.

Each tier consisted of two cakes iced together.

Top two cakes in the first tier were 8″ maderias, second tier was also two 10″ maderias while the next was made up of two 12″ fruit cakes and the bottom two 14″ fruit cakes.

We decided to bring the cake in two parts because the bottom 2 tiers alone were very heavy.

We assembled the cake at the venue and added 60 handmade roses to finish it.

Kilronan Castle Wedding Fair 28th February 2010

We are busy getting ready for Kilronan Castle Wedding Fair tomorrow.?

Going by last years, this wedding fair is usually very busy and with over 60 stands it should have everything the bride or groom would need under one roof.

There will be a fashion show with Catwalk Model Agency at 5pm.

We will have a display of a new selection of our wedding cakes and also some little tasters of carrot, chocolate and chocolate biscuit cake.

Mini Bite Size Cupcakes

We made these mini bite size cupcakes for Niamh and Clive’s wedding recently.   They were for their guests to enjoy at the drinks reception before the meal in Lough Rynn Castle

The cupcakes were chocolate with a chocolate buttercream topping and lemon with a light pink and cream vanilla buttercream.

We set them up on our cupcake stand with little shot glasses holding each plate up.

The Largest Cup of Coffee Cannaboe Ever Made……. YET!

We were asked by MKC Communications, a public relations consultancy firm based in Dublin, to make a cake which would be suitable for the launch of Ireland’s Biggest Coffee Morning in aid of the Irish Hospice Foundation.

Bewleys sponsor this event and it was taking place in Bewleys of Grafton Street at 10am on Sunday morning last.

MKC sent us an image of the new Bewleys crockery and we duly made a giant coffee cup and saucer using maderia cake and some carrot cupcakes.

I delivered the cake to Bewleys on Sunday morning at 10am.   One of the waitors helped me in with the cake as it was quite heavy and had to be brought up to the James Joyce room, two floors up, where the event was to take place around 11am.  I asked a lovely waitress to take a photo of me with the cake and then left it in their capable hands. 

It was an early start but when I got the photos today from the photo shoot I knew it was worth it.

Sharon Ni Bheolain launched the event and Patrick Bewley also stood for the photo shoot holding the new crockery which I’m glad looked a lot like our cake.

Anyway we love a challenge and enjoyed making a completely different type of cake.

Topsy Turvy Wedding Cake

We made this wedding cake for Alma and Steve recently.

Each tier was made using two cakes which were put together and carved into the tapered shape.  They were then iced as one cake with ivory sugarpaste. 

Alma’s bridesmaids were beautiful in their 50′s style blue dresses so we coloured some sugarpaste the same colour and iced the board to bring it into the cake.  The balls were made with different coloured sugarpaste which were rolled in an edible lustre dust.

The wedding was in the Landmark Hotel in Carrick-on-Shannon, Co. Leitrim and a very good weekend was had by all!

Cannaboe Cupcake for Kids workshop

Just back from a workshop for kids in The Food Hub in Drumshanbo.

We had 21 children between the ages of 8-13.  They baked well over 100 cupcakes and had great fun making little sugarpaste toppings for them.

The workshop is one of many all week which is running in conjunction with the Joe Mooney Summer School in Drumshanbo.  My part in it is sponsored by the Taste 4 Success Food Skillnet.  The Cupcake workshop ran today and we are having a Novelty Sugarpaste  Animal workshop tomorrow.  I’m looking forward to seeing all the kids again tomorrow morning at 11am.

I had great help from Aoife, Brian and Hannah.  I hope everyone enjoyed the baking and icing as much as we did.

Single Piece Cakes

We had 30 single piece mini cakes within a 3 tier wedding cake today in Kilronan Castle.  

The three tiers were made from maderia, chocolate and carrot.  The 30 mini cakes were made using maderia cake.

The mini cakes take a lot of time but they are worth it.  They looked lovely.

The cake was for Karishma & Ajay.  Congratulations to you both.

Giant Cupcake

I was asked to make a giant cupcake for a 21st party over the weekend.   This is how it turned out.

It was made from 2 cakes, both chocolate.  The bottom, or case, was covered in pink sugarpaste with white polka dots and the top was covered in buttercream.

Cannaboe Brownies

I made a batch of brownies and sent them off to my ‘official tasters’.

Here is one reply 

Hi Sharon
I take my tasting role very very seriously … and had only just got into the whole:

  • flavour
  • texture
  • lightness
  • overall look
  • yum factor

I didn’t tell you but I’m not a great fan of brownies because they always seem to taste quite dry.

Once again you have changed my mind with your delicious concoctions.

So … scores on my tasting criteria:

  • flavour – 5/5 – really tasty … loved the nuts and chocolate taste
  • texture – 5/5 – was nice and moist even thought it felt well put together
  • lightness – 5/5 – nice and light even though it has a lovely deep choc taste
  • overall look – 4/5 – looks good and had a kind of crumbly feel
  • yum factor – 6/5 – yum yum yum

Coco said she loved them as well.

Bring on more tastings.
